After some (limited) research online I’ve found the max tire width I could go on the stock up gti rims is 215mm.
Might be a bit silly though...
Any thoughts on this?

I’ll be changing my tyres soonish and wondering if it could cause issues
Maybe it would be sluggish and less nimble feeling over stock?
I see people running 205 all the time, would the extra width be too much?

IMHO I’d always stick to the OEM tyre size as that’s what the people who make the car decided works best , but I know a 205 section tyre will be fine and gives you more options in tyre choice.
Why are you thinking about a 215 ?

215's far too wide on that rim. It will diminish the dynamics as the tyre will move on the rim much more, and, as you say, feel much less "nimble"

That's a lot of tyre...........current tyre will drift a little on the limit, nice and progressive breakaway, 215 with just grip, grip, grip, break something and then fall over 🚗🤦‍♂️
