I would assume if a manufacturer like Focal claims that certain speakers are actually upgrades for stock speakers, they will have taken the amp impedance into account.

Eton specifically claim their 2ohm speakers are upgrades for use on the factory head unit, Focal's marketing seems more vague, but it certainly seems to be the case that the chip amplifiers in modern VW head units are stable and clean up to serious volume into 2 ohm loads (I have done a similar upgrade in our Tiguan).

Yes, though in true BBC spirit "other plug and play upgrades are available" (principally because the plastic mount the front woofer sits in is cross-compatible with several vintages of Golf).
